1/2 cupWater
1/2 cup whole milk
1/2 cup soft butter
1/4 tsp fine salt
2 tsp caster sugar
1 cup wheat flour
4 eggs


  • Preheat oven to 450° C
  • In a saucepan, bring water, milk, butter, salt and sugar to a boil. Remove from heat and add flour. Mix and return to a low heat for 1 minute. Remove from heat and transfer to a mixing bowl, allow pastry dough to cool for 2 minutes.
  • Set mixer on a low speed and add 4 beaten eggs slowly. Leave a couple teaspoons of beaten egg for later, this will be used as an egg wash.
  • Scoop and place dough puffs on a baking sheet and brush egg wash onto puffs.
  • Bake for about 12 minutes in an oven.
