Types of Tagines

A Moroccan tagine, also written as tajine, is a glazed ceramic cookware item that is ideal for cooking up a hearty and rich one-pot meal. Tagines are often used for Moroccan cuisine to prepare stews centered around meat, poultry, and fish paired with vegetables and fruit or nuts. It consists of a flatter base bowl along with a conical cover. The key element of a tagine lies in the conical cover which traps the moisture inside while cooking. 

How do You Cook With a Tagine

Found a delicious sounding chicken tagine or lamb recipe that you want to try out but don’t know how to cook with a tagine? It’s not that complicated at all! The first step, and arguably the most important one, is to set up the base of it effectively. Add a layer of vegetables of your choice, most likely these are root vegetables, which will act as a barrier between the meat and the bottom of the clay dish. This will save it from sticking to the bottom during cooking. Then, pour some olive oil on top — this is a prominent element of cooking in it and it’s recommended that you don’t hold back on the oil and garlic. Next, add on the meat or fish of your choice, not forgetting about the flavorful seasoning. Lastly, fill it with water or stock and let it cook over low to medium heat on a stovetop. 

How to Season a Tagine

As surprising as it may sound, it requires seasoning for long-term care as you would with a cast iron pan. To season your tagine, fill a container with water and soak both the base and the lid in it for about two hours. Then dry it thoroughly with a tea towel. You can now proceed to a familiar step in the seasoning process which is brushing on olive oil. Set it in the oven and turn the oven up to 300 degrees Fahrenheit, letting it bake for two hours. Let it cool completely afterward before giving it a final brushing of olive oil before use.
